Fondant is a sugar icing that is rolled out and draped to fit over your cake. It helps to keep cakes fresher so they can sit on display longer at a reception. It lends itself to color better than buttercream which has a natural "yellow" hint to it. It also gives a smoother finish which makes for clean lines.
